Why are font changing from arial to helvetica when a layout is imported in EPS?

I am using the version Igor 5.05 and I observe some weird stuff when exporting my layouts (mainly containing graphs) from igor to EPS.
The font in the EPS document when opened with illustrator is changed form Arial to helevetica and the font is elongated in the lateral direction.
Is there anyway to make it better?

Use a PostScript font instead of using Arial, which is a TrueType font.

Information about postscript fonts is found at this Wiki posting.
Generally good choices are
Helvetica <- sans serif
Times <- serif
Symbol <- symbol
